This very-familiar comfort food is just as well known as Pizza Margherita but the following recipe for Potato Gratin is my take on it and I find it superior to the mainstream version. The name sounds fancy but in reality, gratin just means ” a dish with a light browned crust of breadcrumbs or melted cheese.”

Potato Gratin Ingredient List (use organic when possible)

  • Cooking spray such as Pam
  • 1 cup heavy whipping cream
  • 1/4 cup mayo (I use the kind made with olive oil because it is more heart-healthy)
  • 1 tsp Himalayan or pink salt
  • Black pepper to taste
  • 3/4 cup shredded cheddar cheese
  • 1 1/2 pounds russet potatoes (I leave the skins on for the nutrition)
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup chopped parsley
  • 3/4 cup chopped basil

  • Preheat oven to 350 degrees F.
  • Spray the bottom of a 9″ X 9″ glass baking dish with the cooking spray.
  • In a mixing bowl, whisk the mayo, pepper, salt, cream, and cheddar cheese.
  • Wash and slice potatoes 1/8″ thick.
  • Arrange potato slices in the baking dish, spread on a layer of the cream sauce, and sprinkle on some parsley and basil.
  • Repeat layers as needed (you might have some potato left over).
  • Cover with foil and bake for 1 hour.
  • Remove foil, sprinkle the Parmesan cheese on top, and broil until the top is lightly browned, about 2-5 minutes.

The details of impeachment of government officials varies from country to country. This article will confine itself to how to process proceeds in the United States.

Impeachment, from Dictionary.com:

  • The impeaching of a public official before an appropriate tribunal.
  • (In Congress or a state legislature) the presentation of formal charges against a public official by the lower house, trial to be before the upper house.
  • Demonstration that a witness is less worthy of belief.
  • The act of impeaching.
  • The state of being impeached.

    So, the popular assumption that impeachment means removal from office is simply not true. Rather, it is analogous to an indictment in criminal law, and so it is essentially a statement of charges against the official in question. Impeachment at the federal level is limited to those who may have committed “Treason, Bribery, or other high crimes and misdemeanors .”

    Article One of the United States Constitution gives the House of Representatives the single power of impeachment. The Senate’s responsibility is to try impeachments of officers of the U.S. federal government. On a state level, state constitutions include like measures which allow the state legislature to impeach the governor or other officials of the state government.

    If an official is impeached, he or she then faces a second legislative vote. This vote determines conviction, or failure to convict, on the charges specified by the impeachment. It is notable that this process does not involve the Supreme Court.

    Presidential Impeachment History in the United States

    As of this writing only two US presidents have been impeached. The first was Andrew Johnson. It began to unfold on February 24, 1868, when the House of Representatives resolved to impeach Andrew Johnson, the 17th president of these United States. Specifically, the allegations were high crimes and misdemeanors which were spelled out in eleven articles of impeachment. The main charge against Johnson was the violation of the Tenure of Office Act. This had been passed by Congress in March 1867 despite his veto. Why? He had removed Edwin M. Stanton, the Secretary of War, from office. The act had been designed to protect Stanton and to replace him with Brevet Major General Lorenzo Thomas.

    The second impeachment was President Bill Clinton. It was initiated on October 8, 1998 when the United States House of Representatives voted to begin the impeachment proceedings against Clinton who was the 42nd president of the United States for high crimes and misdemeanors. Specifically, the charges were lying under oath and obstruction of justice.

    Currently, the United States House of Representatives is holding hearings on the possible impeachment of President Donald Trump.

    The United States of Trump is yet another offering from Bill O’Reilly’s stable of historical and insightful books. This book begins with a look at Trump’s childhood and family life, particularly how his father, Fred Trump’s work ethic affected his own personality and work ethic.

    While it is true that The Donald worked with his father and learned his chops there, he wasn’t content with real estate work that was confined mostly to the New York City boroughs of Queens and Brooklyn. He wants Manhattan. When Trump wants something, he’s all focus and strategy.

    New York Business vs Washington

    O’Reilly delves into how “business as usual” differ between New York real estate and inside-the-beltway Washington. They are completely different paradigms and Trump has not been eager nor inclined to morph into a “swamp-dweller.” Unlike the career bureaucrats, his vision includes a strong sense of national sovereignty.

    As O’Reilly says, “But Trump did not temper his New York style and swagger when he rolled into Washington. His inauguration was met with wide-spread loathing, and he did little to win over the DC establishment. He simply did not understand the game because he didn’t want to take the time to figure it out. In New York, it’s in your face. In Washington, it’s in your back.”

    President Trump, the Biased Media, and Fake News

    If there is one thing Trump has roiled about both during the campaign and after taking office, it’s the mainstream media’s tendency to produce fake news. He takes it as a personal insult, which in verified examples it is. It is broadly believed that there are two reasons for this. First, rather than being impartial, the mainstream media is left-leaning. Secondly, the press resents losing their voice to Trump’s tweets where he takes his gritty prose directly to the American people.

    Just as bad as the mainstream media is the world of social media. Twitter has taken to banning the New York Post and censoring a story exposing the corruption of Democrat presidential candidate Joe Biden and his son, Hunter Biden. It is real news preceding the 2020 election. Covering it up is a blatant attempt to influence the election. Forget Russiagate, this is Twittergate.

    The Presidential Election

    Much of the book details the campaigns of both Hillary Clinton and Trump as well as the election itself. O’Reilly is in an excellent position to chronicle this period of time as he was behind the scenes and in fact includes many of his interviews with Trump in the book.

    These interviews are perhaps the best view-ports into Trump’s vision for America and how he plans to make it great again. The businessman-oriented approach is a completely different animal than the Washington-entrenched apparatchik paradigm. His view includes an America strengthened by a robust economy, a strong military, and a southern border wall.

    Although the polls and the mainstream media were all in for Clinton, they all underestimated how Trump’s unorthodox style would play in fly-over country. This is evidenced by the fact that Trump did not win the popular vote but took it by way of the electoral college. Although this book does not delve deeply into how the country has changed because of Trump’s ascendancy (those books were be written later), it does offer an insight into how the president really sees America. I’ve got to give The United States of Trump 4.5/5 stars.

    Is the Impossible Burger Better than a Beef Burger?

    The “impossible burger” has been getting a lot of press lately. Burger King was quick to jump on it by crafting a Whopper version to capture that part of the market stricken with carnophobia (fear of meat). Undoubtedly they have met with some degree of success. After all, if a group of carnivore co-workers drag along their vegan comrade, he or she doesn’t have to settle for salad. Go for that guilt-free burger!

    Before we delve into nitty-gritty of composition and nutrition, let’s try to answer the burning question: does it taste right or does it taste like a salad patty? For the purposes of answering, I made a visit to Burger King. Result? It tasted like its beef counterpart to me. As a bonus, for 10 minutes there, I was saving the planet. Karma.

    The company that developed the Impossible Burger is, not surprisingly, Impossible Foods. Their mission statement reads as follows, “Animal agriculture occupies almost half the land on earth, consumes a quarter of our freshwater, and destroys our ecosystems. So we’re doing something about it: We’re making meat using plants, so that we never have to use animals again.” In all fairness I have to ask, don’t plants occupy real estate? Don’t they consume water? And how do cows destroy the ecosystem? I live in Texas where cattle is abundant and I have yet to see one of those lumbering brutes ravaging the countryside.

    What Ingredients are in an Impossible Burger?

    In 2016 the original Impossible Burger used texturized wheat protein. Then, this past January the company swapped it out with soy protein concentrate which has been served exclusively as of April. The soy was intended to deliver a higher-quality protein. But it also meant that the new patty was gluten-free, something the company said customers wanted.

    Next, the research chefs added fats, notably coconut and sunflower oil. This was to give the burger a juicy sizzle on the grill in an attempt to more closely mimic “meat”. Additionally, they threw in fillers and binders like methylcellulose and modified food starch to hold it all together. Next they focused on additives to make the burger look, feel, and taste just right.

    If that Impossible Whopper had an ingredient label on it you would see:

    Water, Soy Protein Concentrate, Coconut Oil, Sunflower Oil, Natural Flavors, 2 percent or less of: Potato Protein, Methylcellulose, Yeast Extract, Cultured Dextrose, Food Starch Modified, Soy Leghemoglobin, Salt, Soy Protein Isolate, Mixed Tocopherols (Vitamin E), Zinc Gluconate, Thiamine Hydrochloride (Vitamin B1), Sodium Ascorbate (Vitamin C), Niacin, Pyridoxine Hydrochloride (Vitamin B6), Riboflavin (Vitamin B2), Vitamin B12. Well, at least there’s some vitamins in there!

    The Impossible Burger also contains heme, unlike other veggie patties. Heme is an iron-containing molecule commonly found in myoglobin in muscle tissue and hemoglobin in blood. This is what what makes meat taste like meat. Plants contain it as well.

    Is It Healthier than Real Beef?

    In the words of Elisabetta Politi, M.P.H., R.D., L.D.N., Nutrition Director of the Duke Diet & Fitness Center in Durham, North Carolina, “No. I don’t think it’s any healthier. As a nutritionist, I tell people that if we want to find a way to address obesity and diabetes, it’s to go back to the way our grandparents ate. I’m not saying that genetic modification is wrong, but I think it’s disconcerting to make up food. I would not consider this wholesome food because it’s something that has gone through a lot of changes and was created in a lab by the food industry.”

    As far as saturated fat (the bad stuff) goes, she says, “An 85 percent lean beef burger, which is what you see in restaurants, has about 6 percent saturated fat. An Impossible Burger has 8 grams of saturated fat in a four ounce patty, because it contains all that coconut oil.”

    The Impossible Burger falls short on protein. A beef burger offers 29 grams while the Impossible weighs in at 19 grams. If you live with high blood pressure like I do, you should also know that the Impossible contains 370 milligrams of sodium, or about 16 percent of the recommended daily amount whereas there are only 82 milligrams in a beef burger. That’s a huge difference.

    The Impossible Burger has the edge when it comes to fiber, as you might imagine. Beef has zero but the Impossible delivers 3 grams, or about 11 percent of the daily-recommended amount. Regularity is a good thing.

    The Bottom Line

    Both Impossible Burgers and Beef burgers have their pros and cons. As I’ve said before, the “fake meat” tastes the same as the “real meat” to me so it’s really just a matter of choice. If you’re a vegan, environmentalist, or just making a political statement you can now enjoy a burger without guilt.

    Classic Beef Stroganoff Recipe

    What’s not to like about Beef Stroganoff ? It’s a timeless dish that won’t break the budget and is easy to prepare. When I got a hankerin’ for it yesterday I did an internet search and was surprised by all the variations.

    If you are on a low-carb diet but are hankerin’ for something pasta-y and this dish sounds a bit too much, I suggest trying my low-carb spaghetti carbonara recipe.

    In case you are curious — the Stroganoff (or Stroganov) family in 18th century Russia is mainly associated with the popular beef dish which bears its name. The dish likely goes back to a much earlier peasant favorite, but is now usually attributed to the household of Count Pavel Stroganoff (1774-1817).

    Beef Stoganoff Ingredients

    • 1 1/2 pounds of beef sirloin steak, 1/2 inch thick
    • 1 garlic clove, finely chopped
    • 8 ounces fresh mushrooms, sliced (2 1/2 cups)
    • 2 medium onions, thinly sliced
    • 1 1/2 cups Progresso™ beef flavored broth (from 32-ounce carton)
    • 1/4 cup butter (I prefer Kerrygold unsalted Irish butter but suit yourself)
    • 1 teaspoon Worcestershire sauce
    • 1/2 teaspoon salt
    • 1 1/2 cups sour cream
    • 1/4 cup all-purpose flour
    • 3 cups hot cooked egg noodles

    Preparation Steps

    1. Cut the beef across the grain into roughly 1 1/2×1/2-inch strips.
    2. Cook the mushrooms, onions, and garlic in butter using a 10-inch skillet over medium heat. Stir occasionally until the onions are tender. Then, remove from skillet.
    3. Cook the beef strips in the same skillet until they’re brown. Next, stir in 1 cup of the broth, the salt, and the Worcestershire sauce. Heat to boiling; reduce heat. Cover the skillet and simmer 15 minutes.
    4. Stir the remaining 1/2 cup of broth into the flour and stir into the beef mixture. Stir in the onion mixture and heat to just boiling, stirring constantly to maintain consistency. Boil and stir for 1 1/2 minutes and reduce heat. Finally, now stir in the sour cream. Heat until hot but do not boil it. Serve over noodles and enjoy.

    So that’s all there is to making classic beef Stroganoff. Like most of the recipes that I enjoy, it is very adaptable; throw in any extra ingredients or condiments that you like (I’m fond of homemade habanero hot sauce). If you like this recipe, please share the link with your friends. Enjoy!

    Yes, kale is trendy nowadays, but you don’t have to be a hipster to enjoy this simple dish. It is actually a very versatile dish; how it’s made depends on where you order it. Or, if you’re like me and make it at home, you can add or subtract ingredients. The two constants you will find across the board are kale (of course) and a high-quality extra virgin olive oil. The recipe presented here is the one we had last night.

    Kale Salad Ingredient List

    • 5 oz. package of organic kale
    • 1/4 cup extra virgin olive oil
    • Black pepper (to taste)
    • Red pepper flakes (to taste)
    • Himalayan pink salt (to taste)
    • Juice of one large lemon
    • Diced garlic (to taste)
    • Parmesan cheese (to taste; I used about 3/8 cup)
    • Pine nuts (to taste; I used 1/4 cup)
    • Golden raisins (to taste; I used 3/8 cup)

    Preparation

    Easy peasy. Starting with the first ingredient listed, add the others in one by one. Toss the salad after each addition. This makes mixing easier and helps with experimenting with the “to taste” ingredients. There’s really no wrong way to do this. If you find you’ve gone overboard on something you can always add more kale.

    Some additional ingredients that I would like to make (but will likely be vetoed by She Who Must be Obeyed are, in no particular order, crumbled bacon, feta cheese, anchovies, hard-boiled eggs, jalapeno peppers, etc. Not all at the same time, of course; use your imagination.

    It’s interesting to note that out of all book genres, cook books and diet books rank so high. It seems contradictory, doesn’t it? Yet it makes sense that people want to eat well and stay in shape and be healthy all at the same time. Fair enough.

    When following a diet, it is important to keep track of how you are doing. Keeping a log is a good idea. If you use a Garmin GPS sports watch, you already know that the Garmin web app (Garmin Connect) keeps a graph of your weight. But the weight you get from your simple digital bathroom scale isn’t enough; it doesn’t give you the whole picture. You need to also track your BMI (Body Mass Index). You can use a weight/BMI scale or do the math calculation yourself.

    Most diets are associated with weight loss but some are more lifestyle, part of a religious faith, or as part of a periodical detox program. Let’s look at 11 of the most popular diets (as of this writing; fad diets pop up all the time).

    • Atkins Diet. This is one of the big ones. In fact, it was the number one diet of 2017. Oddly, when it was first developed it wasn’t even meant to be a weight loss program; it was designed to benefit folks with cardiovascular risk. This diet relies on restricting carbs. The result is controlled insulin levels so that fat is burned for energy rather than carbs.
    • Gluten Free. Gluten is a naturally-occurring protein in grain plants such as wheat. Anyone who bakes homemade bread for example knows that gluten is the “glue” that holds bread together. Unfortunately, many people are sensitive to it. Many others adhere to this diet because they just believe it to be healthier. Some do it because they think they sound like a hipster when they mention it. It can result in weight loss because, like Atkins, it restricts some carbs. It can be expensive though. Marketing likes trendiness.
    • Ketogenic. This is another one that was developed for other purposes. For example, it has been used for decades as a treatment for epilepsy. It’s basically the same at Atkins in that it reduces carbohydrate intake (less than 10% of daily calories) and raising fat intake. Many researchers are looking at using this diet for  diabetes management and general metabolic health.
    • The Volumetrics Diet. This one puts the focus on the energy density in various foods. This is the number of calories in a certain amount of food. Foods that rate a high-energy density have lots of calories per a little amount of food, and low-energy density foods have fewer calories for more food.
    • Whole 30 Diet. This program relies on abstaining from most processed foods (there is a list of permitted items) along with grains, dairy, alcohol, legumes and sweeteners for 30 days. It has been described as a “nutritional reset program that emphasizes whole foods.” Meat, eggs, fruit, and vegetables are allowed as part of the diet. Dairy products, grains, legumes, alcohol, and sugar are not allowed.
    • Intermittent Fasting. Fasting has been used for centuries for different reasons. In the past it was mostly for religious and ceremonial reasons. Today, weight loss and an improvement of the body’s functionality are the focus here in the west. There are several intermittent fasting plans or methods.
    • Vegetarian Diet. This diet comes in many flavors: living food diet, vegetarian, lacto-vegetarian, fruitarian vegetarian, lacto-ovo vegetarian, pesco-vegetarian, ovo-vegetarian, and semi-vegetarian just to name more than a few. Whew. Studies have demonstrated that vegetarians suffer less from diseases, enjoy a lower body weight,  and may have a longer life expectancy than people who eat meat.
    • Vegan Diet. Veganism is considered more of a way of life and a philosophical outlook than a diet per se. Vegans will not consume anything that is animal-based, which can be very hard. This includes eggs, dairy, and honey. Vegans don’t always get into veganism simply for health reasons, but in addition for environmental, ethical, and compassionate reasons.
    • Mediterranean Diet. This diet has been around for quite a while and as might be guessed it is modeled after, well, the Mediterranean style of eating. In a nutshell, the fare is high in monounsaturated fats from nuts and oils, vegetables, whole grains, and seafood. It also includes token amounts of fruit, dairy, eggs, and a bit of red meat every now and then. It is thought by many to be one of the most beneficially ways to eat for overall health, especially for the cardiovascular system.
    • The Raw Food Diet. Sometimes referred to as raw foodism, it is defined by consuming food and drink that has not been processed. This diet is completely plant-based, and organic whenever possible. The four basic categories of raw foodists are raw vegetarians, raw vegans, raw omnivores, and raw carnivores. This last one scares me.

    Best Way to Install a Misaligned Sink Drain During Remodeling

    During new construction installing sink drains is easy-everything is configured to work together. During a kitchen or bathroom remodeling project it can be a completely different story. You can bet that things will not line up using new components.

    Case in point: in the course of re-building in the aftermath of the flood due to Hurricane Harvey we’ve got new cabinets and sinks.  I needed to match up with the existing wall drainpipe. It came as no surprise that the hook-up was not the straight shot that the original was. I needed a solution.

    A Flexible Solution for Connecting Drain Lines

    After looking at a number of solutions I settled on the Snappy Trap. It seemed like the easiest to install and the price was right. It comes in several configurations-single sink, double-sink, etc.

    In my case I used two single-sink kits since I have two drainpipe p-traps that converge into one drain. Of course, in a situation with a double-sink and one  drainpipe, the Snappy Trap 1 1/2″ all-in-one-drain kit for double bowl kitchen sinks will give the best results.

    In any case, one of the important benefits over other systems is that with this product the flexible tube has a smooth interior. This prevents build-up and excessive odor.

    The System is Dishwasher-Friendly

    The elbow that connects to the sink strainer tailpipe has a dishwasher drain connection nipple that points up at an angle so that there will not be any back flow up into the sink (see the picture below).

    This is a convenient option but if you don’t plan on connecting a dishwasher, simply leave the cap on and you’re good to go.

    Installing a misaligned sink drain during remodeling without hiring an expensive plumber is a thing of the past. If you’ve got some basic tools and some DIY common sense, dive right in. The hardest part is crawling in the cabinet.

    It’s simple. If you have a home you have a roof. Just as a residential fence protects your yard, your roof protects the interior of your home. Even renters need a roof although your landlord is generally liable for repairs like roofing and siding. But if you need to select a roofing contractor here are the things you need to know since a new roof is a rather large investment.

    First, Decide on What Kind of Roofing Material You Want

    You basically first have to choose between a metal or shingle roof. This is important because some contractors do it all but some simply focus on one kind of material. You don’t want a contractor to “practice” or “train new hires” on your dime.

    Metal roofs will cost you more but they last longer and are very fire resistant. Consider this if your home is in the vicinity of fires spread by the Santa Ana winds.

    Questions to Ask Potential Roofing Contractors

    You can create a short list by going to a service like Angie’s List or Networx. You can also ask neighbors who have recently had roof service. After you have a short list it’s time to ask some questions.

    • Do you use nails or staples? Nails are far superior in windy conditions.
    • Have you ever had to deal with a mechanics lien? If so, it generally means he hadn’t paid his workers in a timely manner. Not a good thing.
    • Are you bonded? Do you carry Workers compensation and contractor’s liability insurance? The answer should be a resounding “yes.”
    • Are you willing to sign a binding contract? Life happens to all of us but nothing is worse than a roofing contractor pulling off the job halfway through to deal with something else.
    • How is your record with the BBB.

    These are just some things you need to ask before signing on the dotted line. Protect yourself and your pocketbook.

    Almost everything we do in our homes and work-spaces involve electricity. From refrigerators to night-lights, electricity is involved at the most local level. Today, most of us take it for granted since it has always been there.

    But it hasn’t always been there, which for most of us is a difficult concept to grasp. A political hot-potato has always been how power is generated. Coal, gas, solar energy, or nuclear? It is hard to get a consensus.

    One of the only constants is the bleating from the NIMBY states (Not In My Back Yard). California comes to mind–send us our power but don’t make it here; it;s not “clean”. Hypocrites.

    So, with all that in consideration, here are a few of my musings on the subject of power, power, power.

    Electricity is Delivered Through Conduits

    It doesn’t just show up like an expected relative. No, it enters your home through the main line into your circuit breaker box. From there it is routed where it needs to go depending on where it was designed to go.

    Whenever you move into a home it is advisable to always map your electrical circuits before trouble transpires. When an issue arises you will need to know where things start and where they go, so to speak.

    Depending on the age of your residence, your local electrical code, and the type of devices you install, the means of delivering that electrical power may vary.

    How to Save Money on Your Power Bill

    One of the big problems concerned with your home electricity is that the cost tends to be in flux. Unless you are a big fan of studying natural gas and coal futures it is hard to predict when the price will rise. The  best thing you can do is maximize your home’s energy efficiency in advance. Here are a few money saving tips to consider.

    • Keep your HVAC system in tip-top shape. Having it tuned up twice a year, when the seasons are changing is one way. Calibrate your thermostat; it might not be accurate. Change out your return air filter once a month or as recommended.
    • Consider your old tank water heater with a tankless water heater. There will be some up front costs but you will save money in the long run. Why pay too keep water heated in a tank when you are not using it?
    • Install blown insulation in exterior walls. This generally applies to older homes when insulation was not as big a home construction factor as it is today.
    • Install a radiant barrier in your attic. This is an excellent way to keep your home cooler in the summer and warmer in the winter.
    • Install ceiling fans. This is a great way to keep the conditioned air where you need it when you need it. It is easy to install ceiling fans and they are inexpensive. Just remember to have the air blowing down in the summer and up in the winter.
    • Check your doors and windows for leaks. This should be done at least annually and some caulk and door sealing strips is generally all you need.
